
A long-established miso brewery in business since the 1830’s. We prepare our miso by fermenting it twice, in Japan’s oldest way of doing it. During the first fermentation, which is usually skipped, our brewery’s white cheese fungus goes into the soybeans, and since the soybeans’ degrading enzymes and yeast work more, our miso is rich and has a cheesy flavor.
