
The castle town of the Sanada clan and famed General Sanada Yukimura in the Warring States period, Ueda City in Nagano Prefecture is an area of low rainfall rare even in Japan, and the inland climate and its great difference in warmth and cold along with the clear water running from the Sugadaira highlands to Chikuma are said to have created a place with ideal natural conditions for making miso since ancient times.
Sakatomi’s “Sakura Kome Miso” is slowly and carefully made using the local nature, methods cultivated since the Edo Period, and select ingredients.
