Kitaya Brewery uses an old-fashioned brick furnace boiler and a rice steaming vat passed down to us from when the company was first established, and we safeguard the techniques and methods of craftsmen so that soybeans and rice are fluffy and retain a sweetness. Because we’re a small brewery, we can take this time and effort, and we insist on 100% Nagano-grown soybeans and rice as ingredients, producing the “Yuki Musume handmade rice koji miso” that’s so well-loved locally.
Furthermore, by obtain organic JAS certification and working in concert with farmers in Nagano Prefecture, we have offered the highly-praised “Shizento” series of organic miso made from 100% Nagano-grown ingredients, and we endeavor to produce an elect few high-quality products in small lots.
And so that we continue for a fifth generation, the fourth-generation president’s two daughters continue to work diligently day in and day out as the “Miso Sisters”.
