
“Shiga Kogen Miso” isn’t temperature controlled but rather it’s a “naturally brewed miso” with fermentation left to the natural temperature. Left to slowly ferment for a year at that year’s climate, the miso has the unique flavor of Shiga Kogen’s climate and brewing by a miso brewery that’s been in use for many long years.
