Shinshu Igeta Miso uses locally-grown soybeans and rice koji made from Nagano-grown rice and never uses additives, with every step along the way being done by hand. Checking taste along the way, it is brewed by hand and by the family alone. Fermenting with just the year round seasonal temperatures in Ueda City’s Kamishiojiri and the bacteria in our brewery, our raw miso is completely handmade and without additives
