Taste Test Experiences

Established in the early 19th century in the Edo Period, we have continued to make rice koji, amazake, soy sauce, and miso. We are a small shop, but we do our best to deliver the true flavor of traditional Japanese fermented foods, for the health and happiness of our customers. At the National Soy Sauce Competition, we’ve won the Minister of Agriculture, Forestry, and Fish Award 5 times. We were given the highest award, the Governor’s Award, at the Second Annual Nagano Prefecture Amazake Competition in 2019. Yuryo (fine) Koji has strong fermentation abilities as a koji, and we recommend it for making amazake. We insist on natural brewing using 100% Nagano-grown rice and soybeans, as well as sun-dried salt, for a miso characterized by a mellow taste and deep umami. In 2020, we began selling naturally brewed Marudaizu Soy Sauce made from 100% Nagano-grown soybeans and wheat. We want to deliver the traditional taste of Japan as passed down through generations from our predecessors.
