Our aka (reddish) miso is brewed using daizu koji (from soybeans), which is rare in Japan. Unlike miso using only the microorganisms from kome koji, the entire grain becomes koji, so the miso has a deep, powerful flavor. Please try our miso, slowly fermented in wooden casks year round.
