
In Higashimachi near Matsumoto Castle for more than 230 years, we began business as “koji makers”. Ever since, we’ve been developing miso, soy sauce, koji, and all kinds of tsukemono pickles with the taste that local people love. Our Tamazukuri Inaka Miso is made from Nagano-grown Tsubohomare soybeans steamed in spring, left to ferment, then prepared with special koji and Japanese salt, and finally fermented until fall. We hope you’ll enjoy the rich taste and traditional aroma. Furthermore, our “Mild Koji Miso” prepared with 13 wari koji has been loved by many for its characteristic sweet taste and umami, and it’s our most popular miso. We make it mild.
